If you want a more tender bread, use minced meat once and do not knead the mixture too much, otherwise the consistency will be lost. Mix just enough to mix the ingredients. If you like a moister bread, add a mashed wet slice of white bread instead of breadcrumbs.
The internal temperature of the ground beef should be 170 F before the pork is 185 F. A typical ground beef should be baked in a standard 4 x 4 x 8 inch loaf pan at 350 degrees for 1 to 1 1/2 hours. When making meatloaf or meatballs, it is common practice to add some breadcrumbs/biscuits/soft bread as well as eggs and often milk. Milk and eggs are obviously wet ingredients and help keep things moist, but in addition to natural moisture, they’re also packed with protein. When the proteins in milk and eggs cook, they form a network that can help retain moisture in the bread.
At the same time, the bread-like ingredients form a sponge inside the meat crumb that retains the moisture. The crumbs absorb moisture not only from the eggs and milk, but also when the meat is cooked and remove its own water. The breadcrumbs absorb it so the bread doesn’t dry out.
So much for binders, but they’re only half the battle. No ground meat, no matter how well bound or how much milk you add, cannot survive overcooking. Since it is made from ground meat, we have to cook all the meatballs to 71°C. But since we don’t want to dry it out, we don’t want to exceed that temperature at all if we can help it. Monitoring the temperature during cooking can help ensure success. Since the mince is cooked in a reasonably hot oven – 350°F (171°C) – there will be some cooking, so pull it from 68°C. This critical temperature gives you a meatball that is both safe and as juicy as possible.
(It can also be good to add some ground pork to the meat shortage to add moisture. Ground pork often comes from collagen-rich cuts and has a lot of gelatin to add to the bread to retain moisture.)
So yes, we want our ground beef moist, but we don’t want it greasy and soggy. If we take a pile of minced meat and put it in a bread pan, the fat that comes off has nowhere to go, and so the bread swims in its own juices…but not in a good way. Solve this problem by making a freeform meat grinder. Form it from the bread or on a sheet lined with foil into a long dome, so that excess fat runs off the bread during cooking. If you’ve bound and shaped your ground beef properly and not overcooked it, it will have the perfect consistency without being soggy or dry.
Bonus: this shaping method also helps with the formation of discs and crusts, but we’ll talk more about those below.
