But since most of us have no idea what xanthan gum or potassium benzoate are, or more importantly, what they do to our bodies, we Americans decipher the ingredients of many things we take (and/or are close to) ourselves.
This version: Krispy Kreme Original Coated Glaze Cereal is made from 33 separate ingredients that we’ve outlined in the order we found them online.
1) Enriched Wheat Flour (wheat flour, niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid): As we learned while researching many, many ingredients in McDonald’s Big Macs, enriched flour is not actually “enriched”. As well as being more caloric than wheat flour, the bleaching process often produces a frustrating byproduct: a chemical called allosan, which destroys the pancreas in laboratory animal test subjects and causes diabetes.

3) Palm Oil: Many major donut sellers, including Krispy Kreme, have a history of frying their products in palm oil or mixtures containing palm oil. Unfortunately, when consumed in large quantities, palm oil can cause various problems, including fatty liver, insulin resistance, and migraines. Unfortunately, the source of palm oil is not good for the environment. That’s why Krispy Kreme and other popular donut makers have vowed to switch to deforestation-free palm oil. But in an ideal world, they’d use something else entirely.
4) Soybean Oil: While soybean oil is not as bad for the environment, the same concerns apply.
5) Sugar: One layer candy has 10 grams of sugar, which can add up, but is still a reasonable amount at, say, 61 grams in a Starbucks donut. For reference, the American Heart Association recommends no more than 36 grams of sugar for men and 25 grams for women a day.
7) Soy Lecithin: The fatty component of soy lecithin comes from—you guessed it—nuts. It’s usually added to food products as an emulsifier, meaning it helps the many ingredients in this sugar mixture stick together. “It’s also often used to extend the shelf life of products,” ingredients expert Dagan Schauer, co-founder of Label Insight, told me during an analysis of ingredients in frozen breakfast sandwiches.

8) Hydrogenated Soybean Oil: Soybean oil may be bad, but hydrogenated soybean oil is even worse. When you add hydrogen to food through hydrogenation, you get an oil to extend the shelf life of many plants. Unfortunately, fat raises cholesterol, hardens the arteries, and blocks the formation of an enzyme called cyclooxygenase, which regulates blood flow by determining the dilation of blood vessels. So pay attention to this ingredient.
10) Mono and diglycerides: Mono (that is, monoglycerides) and diglycerides are dough conditioners that improve the texture or quality of dough. Like hydrogenated soybean oil, they often pack fats that aren’t listed on the Nutrition Facts label, which is especially problematic: Because trans fats are linked to an increased risk of heart disease, stroke, and diabetes, consuming more than you think (because it doesn’t show on the label) can seriously harm your body.
11) Wheat Gluten: People with vascular disease caution: Wheat gluten is wheat flour that has been hydrated to activate gluten and then processed to remove all but the gluten. It is added to improve the chewing of the grains.
12) Calcium sulfate: Calcium sulfate is added to stabilize food and regulate its acidity. It can be used as a flour treating agent to increase the dough’s rising rate and improve the dough’s strength and workability. In amounts commonly found in foods, calcium sulfate is unlikely to cause side effects and is generally considered safe by the FDA.

13) Monocalcium Sulfate: Monocalcium phosphate in baked goods can produce carbon dioxide, which helps dough rise. If consumed in the right amount, this ingredient is nothing to worry about. That said, too much phosphate in the diet, especially in processed foods like Krispy Kreme bars, can accelerate aging, increase the risk of heart disease, and put excessive stress on the kidneys.
14) BHT: BHT is a common preservative added to prevent product spoilage. Research goes back and forth about whether it is carcinogenic, but it’s best avoided if possible.
15) Powdered Milk: As well as providing protein, the fat in powdered milk makes for a fluffier grain overall.
