All of these measurements are useful and hard to remember, but very important if you’re preparing kombucha or brewing and sometimes cooking. The metric system would be easier, but we Americans are very stubborn and sentimental and will no doubt stick to our cups and gallons.

So where do we get our measurements? Well, it’s a long story, or at least a very old one. In Rome, everything was measured in 1/2s, 1/4s, 1/8s, etc. This seems strange today because the decimal metric system is so simple, but in Roman times 1/4 of a gallon, that is, a quarter, was easy to measure. A 1/4 was obtained by dividing the contents in half and then in half again. Dividing a carafe of wine by 1/10 was difficult to do accurately, and one would be angry at being shorted. The two standard types of gallons which are an American gallon and a British gallon also known as a royal gallon both have a similar difference in cups which is 16 cups. So a US gallon which is also a liquid gallon has 16 cups. A liquid gallon is now considered a standard gallon because a dry gallon is no longer used to estimate how many cups are in a gallon.
