It took me a while to learn how to properly measure flour and what the hack for packaging (brown) sugar means, and to be honest, I still don’t measure butter with cups and spoons because I don’t know how (okay, no problem with melted butter, but cold is a different story), so I use a cheat sheet for this 🙂.
How Many Cup Is 100 Grams
When I cook/bake and develop recipes, I always use a kitchen scale to determine the exact weight and then use cups and spoons to convert it to volume. In my recipes you will always find both measurements (grams/milliliters and cups/teaspoons). I suggest using a kitchen scale when using my recipe, especially for desserts, if you have one.
Cup To Gram Conversions
LIQUID (water, milk, oil) – fill the glass to the appropriate mark; Place the glass on a flat surface, then look at it at eye level as you pour the liquid.
FLOUR. Measuring flour incorrectly is one of the most common mistakes people make when baking and cooking. To properly measure flour, lightly scoop flour directly into the measuring cup from the container or bag – DO NOT WEIGH. Continue pouring the flour into the cup until it accumulates well above the top of the measuring cup. Do not shake the cup or use a spoon to pour flour into the cup. Spoon the flour into the measuring cup and use the back of a knife to level the top of the measuring cup.
SUGAR – Pour granulated sugar or powdered sugar with a spoon into a dry measuring cup and level. On the other hand, brown sugar needs to be pressed firmly into the dry measure so that it retains its shape when poured.
Sift the baking powder, soda and active dry yeast with a measuring spoon, carefully remove from the bowl. Use a knife to flatten it. The cups are more intuitive and we all like to stick to what we’re comfortable with, which is fine if you’re measuring carrots for a stew where a few grams difference won’t make a difference. One glass of flour is equal to 125 grams. Because each ingredient has a different density, other dry ingredients may weigh more or less than this. For example, if you look at the chart above, you will notice that one cup of cocoa weighs 200 grams.

I always recommend using a scale instead of cups. At Daily Dish, I give you cup units (in addition to metric measurements) in all my recipes. I do this to make life easier for American chefs who don’t have digital scales. But if you have the opportunity to use the scale, I highly recommend it. Even the best measuring cups aren’t as accurate as scales, and precision is essential for precision tasks like baking.
One example of how inaccurate cup measurements can be is when measuring flour. Different bakers fill the cup in different ways. Some will use the sweep-and-scoop method, which leaves the cup loose, resulting in less flour. Others spoon the flour into the cup, causing it to compact, resulting in more flour. Sifted flour can weigh up to 50% less than flour added using the sweep and spoon or spoon method. As you can see, the dimensions of the volume (cup) can vary greatly, which means that the result of your baking will also be different. It’s not ideal.

On the one hand, I am very glad that people do not want to buy more things. Also, if you’re like me, you might lose track of how many cups you added to the bowl (“Was it a cup four or five cups?”). And weighing all those cups just takes more work.

So while I don’t approve of this behavior (use of measuring cups), I think telling people never to measure flour by volume is like telling teenagers to never have sex. They will do it anyway to have the correct information. Maybe not the best analogy, because bread is literally a bun in the oven …
